Chicken Metrazzini

Ingredients

  • 4 c. cooked, diced chicken
  • 1 (1 lb.) pkg. spaghetti or fettucine noodles, broken into bite size pieces, cooked and drained well
  • 6 Tbsp. butter, melted
  • 6 Tbsp. flour
  • 1 tsp. salt
  • 1 tsp. basil
  • 1 1/2 c. light cream or 1 tall can Pet milk
  • 1 1/2 c. chicken broth
  • 1/2 c. grated Parmesan cheese
  • 1 to 2 cans mushrooms (I use 2)

Directions

    Make a white sauce with butter, flour, cream and broth.

    Cook on medium heat until thickened. Add chicken, mushrooms and spaghetti.

    Spoon into a large greased casserole.

    Sprinkle Parmesan cheese on top. Bake at 400° for 20 to 30 minutes. Freezes well.
