  • 1 (3 lb.) chicken
  • 1 (6 1/4 oz.) pkg. tortilla chips
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 c. chicken broth
  • 1 (10 oz.) can tomatoes with green chilies
  • 1 medium onion
  • 1 medium chopped bell pepper
  • 1 lb. Longhorn cheese

    Cook chicken; remove skin and bone.

    Preheat oven to 350°. Arrange tortilla chips on bottom and sides of a 13 x 9 x 2-inch oblong baking dish.

    Cover tortilla chips with broken pieces of chicken.

    Combine liquid ingredients.

    Add onion and bell pepper. Pour over chicken.

    Top with grated cheese.
