Ingredients
- 1 large whole chicken breast, skinned and halved
- 1 medium onion, quartered
- 1 (4 oz.) can mushrooms, sliced and drained
- 1/2 stick butter or margarine
- salt and pepper
- 2 medium tomatoes, peeled and quartered
- 1 bell pepper, sliced
- 2 large slices Mozzarella cheese
- 1 oz. olive oil
Directions

1Preheat frypan to medium-high.

2Add butter and olive oil. When heated, add chicken, bone side down, turning 2 or 3 times until done, 12 to 15 minutes.

3Remove chicken; set aside.

4Add tomatoes, onion and bell pepper with salt and pepper to taste, to frypan.

5Reduce heat; stir-fry vegetables until done.

6Place chicken on top of vegetables.

7Cover chicken breasts with mushrooms until cheese is melted.

8Serve with French bread.
