Chicken Mozzarella

Ingredients

  • 8 chicken breasts, skinned, halved and flattened into a cutlet shape, dust lightly with flour
  • 2 eggs
  • 2 Tbsp. water
  • 1 c. bread crumbs
  • 1 c. Parmesan cheese
  • 1/4 tsp. garlic powder
  • 2 Tbsp. paprika
  • 1 can tomato sauce (15 oz.)
  • 1/2 lb. Mozzarella cheese, grated
  • oil for frying

Directions

    Beat eggs with water and set aside.

    Combine crumbs, Parmesan cheese, garlic powder and paprika.

    In large skillet, heat oil (about 1/2 inch).

    Dip chicken breasts into the egg mixture and then into crumb mixture.

    Fry chicken in the hot oil until golden brown on both sides.

    Remove chicken to a 9 x 13-inch pan.

    Lay chicken in one layer in pan.

    Drizzle tomato sauce over chicken. Sprinkle Mozzarella cheese evenly over top.

    Sprinkle top with additional Parmesan cheese.

    Bake in 350° oven for 30 minutes or until piping hot and cheese is melted and lightly browned.
