- 4 boned and skinned chicken breast halves
- 2 Tbsp. olive oil
- 2 cloves garlic, minced
- 1/4 tsp. freshly ground pepper
- 1 c. finely ground bread crumbs (made from 2 to 3 slices French or other bread)
- 1/4 tsp. cayenne pepper
- 2 1/2 tsp. honey
- 2 Tbsp. Dijon mustard
Directions

1Preheat oven to 475°.

2Cut each chicken breast half into 8 pieces.

3Mix oil, garlic and pepper with chicken pieces and marinate about 30 minutes.

4Combine bread crumbs and cayenne. Place on plate.

5Roll chicken pieces in bread crumbs and place on large cookie sheet in a single layer.

6Bake for about 15 minutes, until browned and cooked through.
