- 4 half chicken breasts
- 2 cans stewed tomatoes
- 2 Tbsp. cornstarch
- 1/2 tsp. oregano or basil, crushed
- 1/4 tsp. hot pepper sauce
- 1/4 c. grated Parmesan cheese
Directions

1Place chicken breasts, which have been skinned and boned, in baking dish.

2Bake, covered, 15 minutes in preheated 425° oven; drain.

3Combine tomatoes, cornstarch, oregano and pepper sauce (optional).

4Cook, stirring constantly, until sauce is thickened. Pour heated sauce over chicken.

5Top with cheese.

6Bake 5 minutes, uncovered.
