- 8 skinned and boned chicken breast halves
- salt and pepper
- flour
- garlic powder
- 1/4 cup butter
- 1/4 cup olive oil
- juice of 1 lemon
- 1/4 cup marsala wine
- 1 cup chopped parsley
Directions

1Sprinkle chicken with salt, pepper and garlic powder.

2Dip chicken into flour and coat.

3Heat butter and oil in large skillet.

4Brown chicken slowly on both sides until cooked.

5Remove to warmed platter.

6Stir lemon juice and wine in pan with drippings to deglaze.

7Stir thoroughly to loosen all pieces. Spoon over chicken.

8Sprinkle with parsley and garnish platter with pimento and lemon wedges.
