Ingredients
- 4 carrots, peeled and cut up
- 3 Tbsp. butter
- 1 medium onion, chopped
- 2 or 3 chopped celery stalks
- 1 tsp. basil
- 1/2 tsp. salt
- freshly ground pepper to taste
- 1/4 c. flour
- 1 (13 3/4 oz.) can chicken broth
- 2 1/2 c. cooked chicken or turkey, cut up
- handful of chopped parsley
- uncooked single pie crust
Directions

1Preheat oven to 425°.

2Cook carrots for 10 minutes in water, drain and set aside.

3Melt butter in large, deep frying pan.

4Add onion, celery and basil.

5Saute for 5 minutes.

6Stir in salt, pepper and flour.

7Continue to saute for a few minutes.

8Blend in chicken broth.

9Turn up heat and cook until thick and bubbly. Remove from heat.

10Add chicken, carrots and parsley.

11Pour into 3-quart casserole.

12Top with parsley.

13Bake 25 minutes.
