- 2 chicken breasts, split and skinned
- 4 medium-size potatoes
- 2 large carrots
- 1/2 lb. fresh green beans or 1 (10 oz.) pkg. frozen
- 1 large onion
- 1 Tbsp. dried parsley flakes
- freshly ground black pepper
- 1/2 c. dry sherry
Directions

1Place chicken in large heavy ovenware pot.

2Peel potatoes, slice 1/2-inch thick; place on top of chicken.

3Peel and quarter onion.

4Peel carrots and cut lengthwise.

5Place carrots, beans, parsley flakes and pepper on top of potatoes.

6Pour sherry over all.

7Cover tightly.

8Bake at 300° for 2 hours.
