- 1 fat hen
- 1 pimentos
- 2 eggs
- pie crust
- 1 c. celery
- 1 medium onion
- 2 cans mixed peas and carrots
Directions

1Cook fat hen and dice meat.

2Saute celery, pimentos and onion in a small amount of butter.

3Make chicken gravy very thick from stock, thicken with cornstarch or flour.

4Cut up 2 hard-boiled eggs into gravy.

5Add sauteed vegetables, 2 cans of mixed peas and carrots and the diced chicken.

6Pour into long baking dish and cover with pie crust.

7(Bottom crust is optional.)

8Bake in moderate oven (350°) until brown, about 45 minutes.
