Chicken Pot Pie

  • 1 fat hen
  • 1 pimentos
  • 2 eggs
  • pie crust
  • 1 c. celery
  • 1 medium onion
  • 2 cans mixed peas and carrots

    Cook fat hen and dice meat.

    Saute celery, pimentos and onion in a small amount of butter.

    Make chicken gravy very thick from stock, thicken with cornstarch or flour.

    Cut up 2 hard-boiled eggs into gravy.

    Add sauteed vegetables, 2 cans of mixed peas and carrots and the diced chicken.

    Pour into long baking dish and cover with pie crust.

    (Bottom crust is optional.)

    Bake in moderate oven (350°) until brown, about 45 minutes.
