- 1 Tbsp. oil
- 3/4 lb. boneless, skinless chicken breast
- 1 c. broccoli flowerets
- 1 c. thawed frozen green peas
- 1 carrot, cut in strips
- 1 small onion
- 1 can chicken broth
- 1/2 tsp. dried basil leaves
- dash of pepper
- 1 1/2 c. Minute brown rice (uncooked)
- 1/4 c. grated Parmesan cheese
Directions

1Heat oil in large skillet.

2Add chicken.

3Cook and stir until browned.

4Add broccoli, peas, carrot and onion; cook and stir until vegetables are tender-crisp.

5Stir in broth, basil and pepper.

6Bring to a boil.

7Stir in rice.

8Return to boil.

9Reduce heat to low; cover and simmer 5 minutes.

10Remove from heat.

11Let stand 5 minutes.

12Stir in cheese.
