  • 6 thick bacon slices, broiled and drained
  • 12 thick slices Swiss or Gruyere cheese
  • 4 eggs, beaten
  • 1 Tbsp. flour
  • nutmeg
  • cayenne pepper
  • 2 c. light cream
  • 1 1/2 Tbsp. butter, melted
  • pastry for a 9-inch pie

Directions

    Line 9-inch pie plate with pie crust.

    Arrange slices of cheese and bacon in overlapping layers in pie crust.

    Beat eggs with flour, generous grating of nutmeg and cayenne to taste.

    Add cream and melted butter.

    Pour this mixture over bacon and cheese and bake in 350° oven until custard is set and lightly browned, about 40 minutes.
