Chicken Roast Potatoes

  • 8 large gold poatatoes
  • 1/4 cup of rendered chicken fat
  • 6 cloves of garlic, smashed
  • salt and pepper to taste

Directions

    Pre-heat oven to 425.

    Put potatoes in a pot with enough water to cover. Bring to a boil and cook for about 20 minutes until potatoes are almost cooked through.

    Remove potatoes from the water and let them cool.

    Cut the potatoes into wedges and toss with the chicken fat, garlic salt and pepper. Lay the potatoes and garlic flat on on a baking sheet (non-stick, or covered with parchment).

    Bake for about 30 minutes until the potatoes are golden.
