- 2 to 3 lb. fryer
- salt and pepper
- 2 stalks celery
- 1 small onion
- 1 small bell pepper
- 1 stick margarine
- 7 oz. pkg. vermicelli
- 1 can English peas
- 1 (8 oz.) jar mushrooms
- 1 lb. Velveeta cheese
- 1 can Ro-Tel tomatoes
Directions

1Boil chicken seasoned with salt, pepper and celery.

2Remove from bone and save 1 1/2 quarts of the broth.

3Saute the onion and bell pepper in the margarine.

4Set aside.

5Cook the vermicelli in the chicken broth and do not drain.

6When tender, add peas (drained), mushrooms (drained), cheese (cut in small pieces) and Ro-Tel (chopped).

7Add onion and bell pepper, then chicken.

8Mix carefully.

9Bake at 350° for 30 minutes.

10Serves 8 to 10.
