- 1 (3 lb.) chicken, boiled, deboned and cut in bite-size pieces
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 stick oleo
- 1 lb. Velveeta cheese
- 1 can Ro-Tel tomatoes
- 1 can mushrooms
- 1 (12 oz.) pkg. vermicelli noodles
- 1 can cream of mushroom soup
Directions

1Saute onion and pepper in oleo until tender.

2Add Ro-Tel tomatoes, cheese and soup to sauteed vegetables.

3Stir until cheese melts.

4Add chicken and mushrooms.

5Cook vermicelli in chicken broth.

6Drain and add to other ingredients.

7Mix well and pour in 13 x 9-inch baking dish.

8Bake at 350° until bubbly, about 30 minutes.
