- 1 (4 to 5 lb.) chicken
- 3 qt. water
- 1 carrot, diced
- 2 stalks celery, chopped
- 1 medium onion, chopped
- 1 Tbsp. salt
- 1/4 tsp. pepper
Directions

1Cook chicken in water until almost tender, approximately 1 1/2 hours.

2Add onion, carrot, celery, salt and pepper.

3Cook 1 hour and strain soup (stock).

4Cut meat into bite size chunks and save for another meal.

5Serve with noodles.
