Chicken Spaghetti

  • 3 lb. chicken
  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 1 stick margarine
  • 1 pkg. long spaghetti
  • 2 small cans LeSueur English peas (undrained)
  • 1 can Ro-Tel peppers and tomatoes, chopped (undrained)
  • 2 small jars pimento, chopped
  • 2 c. Velveeta cheese

Directions

    Simmer chicken until tender; cool, debone and save broth. Saute peppers and onions in margarine until tender.

    Cook spaghetti in chicken broth until broth is absorbed.

    Mix together onions, peppers, peas, Ro-Tel, pimento and chopped chicken.

    Add 2 cups cubed Velveeta cheese and all other ingredients; heat slowly until cheese is melted.
