Chicken Spinach Pinwheels

  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
  • 1 egg, lightly beaten
  • 1/2 c. shredded Swiss cheese
  • 3 Tbsp. chopped pimento
  • 2 Tbsp. mustard, divided
  • 6 skinless, boneless chicken breasts, lightly pounded
  • 1 Tbsp. butter, melted
  • 1 c. plain low-fat yogurt
  • 1 Tbsp. flour

    In a medium bowl, combine spinach, egg, cheese, pimento and 1 tablespoon mustard.

    Spread mixture on each chicken breast and roll.

    Fasten with toothpick.

    Place rolls in a 12 x 8-inch baking dish.

    Drizzle rolls with butter.
