- 4 boneless skinned chicken breasts
- 1 egg
- 2 Tbsp. Dijon mustard
- 1 Tbsp. water
- 1/4 c. (1/2 stick) butter
- 1/2 c. plain dried bread crumbs
- 1/4 tsp. salt
- dash of pepper
- flour to dredge chicken in
- 1 1/4 c. milk
- 1 c. shredded Swiss cheese (4 oz.)
Directions

1Gently flatten chicken breasts between pieces of wax paper with rolling pin or flat side of meat mallet.

2Combine egg, water and 1 tablespoon mustard in bowl.

3Combine bread crumbs, thyme, salt and pepper on piece of wax paper.

4Coat chicken evenly with flour.

5Dip chicken in egg mixture; roll in bread crumbs.
