- 1 (3 to 4 lb.) chicken
- 1/2 lb. Longhorn cheese
- 1 onion
- 1 can Ro-Tel tomatoes
- 6 taco shells
Directions

1Cut chicken into parts and bake, covered, 1 hour in a 350° oven.

2Grate cheese, chop onion and tear taco shells into small pieces.

3Combine 1 can of soup with 3 Ro-Tel tomatoes plus a little Ro-Tel tomato juice.

4Heat this mixture; also, a little chicken broth may be used if needed or desired.

5Layer in a greased casserole dish, alternating chicken, onions, tacos and cheese and soup.

6Save some taco bits for the top.

7Bake at 350° for 30 minutes.
