- 2 Tbsp. vegetable oil
- 3/4 lb. chicken, in 1/2-inch pieces
- 1/2 c. chopped onions
- 1 c. thick salsa
- 1 (11 oz.) can corn with red and green peppers, drained
- 1 pkg. Ortega taco shells
Directions

1Cook chicken 2 minutes in oil.

2Stir well.

3Add onions and peppers; cook until chicken is done.

4Drain; put aside.

5Over medium heat, in same pan, put salsa and 6 ounces of Cheddar.

6Cook and stir until cheese melts.

7Add the chicken.

8Break tacos into 4 pieces each.

9Spoon 1 tablespoon mix onto shell; sprinkle with cheese.

10Bake at 350° for 5

11minutes, until cheese melts.
