Chicken Thighs Mozzarella

  • 1 pkg. boneless thigh fillets
  • 1/3 c. all-purpose flour
  • 2 Tbsp. grated Parmesan cheese
  • 1 eggs, beaten with 1 Tbsp. water
  • salt and pepper to taste
  • 2 Tbsp. butter
  • 3/4 lb. mushrooms, sliced
  • 4 slices cooked ham
  • 8 slices Mozzarella cheese

Directions

    Combine flour, Parmesan cheese, salt and pepper.

    Dip each thigh in egg, drain and dredge in flour mixture.

    Heat oil in 4 tablespoons butter in skillet.

    Add coated thighs and cook for 2 minutes on each side, until brown.

    Remove thighs with slotted spoon and arrange in single layer in a 12 x 8-inch baking dish. Preheat oven to 350°.

    Add remaining 2 tablespoons butter to skillet and saute mushrooms for 4 minutes.

    Cut each slice of ham in half and place on each thigh.

    Scatter mushrooms over all and top with Mozzarella.

    Bake for 35 to 40 minutes or until chicken is tender.
