  • 3 chicken thighs OR
  • 2 Chicken breasts
  • 2 cloves garlic
  • 1 tablesp oil
  • 4 green shallots
  • 1 small green capsicum
  • 2 red chillies OR
  • 1 tablesp sweet chilli
  • 1 tablesp fish sauce
  • Small tin coconut milk
  • 1 teasp Sugar
  • 3/4 cup BASIL Leaves

    Cut Chicken into serving pieces then cook in oil. Add garlic, shallots, capsicum and stir for a couple of minutes then add remaining ingredients except for basil leaves. Stir, then add coconut cream and basil leaves let sit for one minute and then serve with steamed rice
