- 2 (4 oz.) cans green chiles, roasted and peeled
- 1/2 lb. cheese (Longhorn or Monterey Jack)
- flour
- 2 eggs, separated
- 1/8 tsp. salt
- oil for frying
Directions

1Cut cheese into strips and press into chiles.

2Dredge with flour.

3Whip egg whites until stiff.

4Beat yolk, salt and 1/4 cup flour.

5Fold in egg whites.

6Heat oil in skillet (2 inches).

7Dip chiles in egg mixture.

8Place in skillet.

9Fry until brown, turn and fry on other side.
