  • 2 (4 oz.) cans green chiles, roasted and peeled
  • 1/2 lb. cheese (Longhorn or Monterey Jack)
  • flour
  • 2 eggs, separated
  • 1/8 tsp. salt
  • oil for frying

    Cut cheese into strips and press into chiles.

    Dredge with flour.

    Whip egg whites until stiff.

    Beat yolk, salt and 1/4 cup flour.

    Fold in egg whites.

    Heat oil in skillet (2 inches).

    Dip chiles in egg mixture.

    Place in skillet.

    Fry until brown, turn and fry on other side.
