Ingredients

  • 2 lb. round, cut in 1/2-inch cubes
  • 1/3 c. olive oil
  • 4 large onions, chopped
  • 1 (4 oz.) can green chilies
  • 2 (16 oz.) cans light red kidney beans, drained
  • 1 (28 oz.) can tomatoes, chopped
  • 5 Tbsp. chili powder
  • 2 tsp. salt
  • 2 c. water
  • 1 tsp. cumin
  • 1/4 tsp. cayenne
  • 4 bay leaves
  • 1 clove garlic

Directions

    Saute onions and garlic in oil until transparent.

    In 5-quart pot, brown beef, 1/3 at a time.

    Mix in green chilies and cook for 2 minutes.

    Add all ingredients to beef and mix well.

    Cook on low heat for 3 hours and serve.
