- 1/2 c. chopped onion
- 3 Tbsp. chopped green pepper
- 2 Tbsp. chopped sweet red pepper (optional)
- 1 c. chopped tomatoes, peeled
- 2 Tbsp. butter or margarine
- 1 tsp. paprika
- 2 tsp. flour
- 1 lb. processed cheese, cut in chunks
Directions

1Saute onion, peppers and tomatoes in butter.

2Stir in paprika and flour.

3Add cheese.

4Heat slowly for about 10 minutes, until cheese melts.

5(Do not stir until cheese melts.)

6Serve as a warm dip with corn chips or dribble over baked enchiladas or tacos. (Dip becomes thick when cool.

7Reheat with a tablespoon of water. Dip may be frozen.)
