- 1 c. flour
- 1 c. cornmeal
- 2 Tbsp. sugar
- 1 Tbsp. baking powder
- 2 tsp. chili powder
- 3/4 tsp. salt
- 1 scallion
- 1 c. milk
- 1/2 c. applesauce
- 1 egg
- 1 can corn, drained
Directions

1In mixing bowl, combine the flour, cornmeal, sugar, baking powder, chili powder and salt.

2Chop scallion.

3Beat milk, applesauce and egg until just combined and stir in scallion and corn.

4Stir flour mixture into milk mixture until just combined but still lumpy.

5Spoon into prepared muffin pans.

6Bake until edges start to brown.

7Bake at 400° for 15 to 20 minutes.
