- 1 lb. or 3 (8 oz.) cans whole chiles
- 1 lb. shredded Cheddar cheese
- 1/2 lb. shredded Monterey Jack cheese
- 3 eggs
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1 2/3 c. evaporated milk
Directions

1Butter a 9 x 13-inch pan.

2Split chiles; remove seeds and rinse.

3Alternate chilies, cheese, chiles in 3 layers.

4Beat eggs, flour and salt.

5Blend in evaporated milk.

6Pour mixture over chiles and cheese.

7Bake in 350° oven for 30 minutes.
