  • 4 c. cooked Minute rice (1/2 c. uncooked equals 1 c. cooked)
  • 1 (16 oz.) sour cream
  • 1 onion, chopped
  • 2 tsp. salt
  • 1 (6 oz.) can green chili peppers, chopped
  • 20 oz. Monterey Jack cheese, grated and divided in half

Directions

    Combine first 5 ingredients and 10 ounces of cheese.

    Place in casserole and top with additional 10 ounces of cheese.

    Bake at 350° for 30 minutes.
