  • 12 lb. ripe tomatoes
  • 10 medium sized onions
  • 4 sweet green peppers
  • 1 stalk celery
  • 1 qt. vinegar
  • 3 c. sugar
  • 1 Tbsp. each: allspice, cinnamon and ground mustard
  • 2 Tbsp. salt

Directions

    Peel and chop tomatoes; prepare and chop all other vegetables and combine with tomatoes.

    Boil gently for 2 hours, stirring frequently.

    Add vinegar, sugar, salt and spices.

    Cook over simmer flame 1 hour longer, stirring occasionally.

    Pour into hot sterilized jars and seal.

    Makes 8 to 10 pints.
