Chili Supper Casserole

Ingredients

  • 1/2 lb. ground beef
  • 1/4 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1 (two can pack) chili dinner with beef and beans
  • 1 (8 oz.) can whole kernel corn, drained
  • 1 (4 oz.) pkg. shredded sharp Cheddar cheese (1 c.)
  • 1 (8 1/2 oz.) pkg. corn muffin mix

Directions

    Cook ground beef, onion and pepper until meat is browned and vegetables are tender.

    Stir in both cans of chili dinner, corn and cheese; heat until bubbling hot.

    Pour into 10 x 6 x 2-inch baking dish.

    Prepare muffin mix following package directions. Spoon half the batter in diagonal bands across top of casserole. Spoon remaining batter into 3 or 4 paper baking cup-lined muffin pans.

    Bake both at 400° for 17 minutes.
