  • 2 dozen whole red chillies, roughly chopped
  • 3 large red bell peppers, seeded and roughly chopped
  • 3 large yellow bell peppers, seeded and roughly chopped
  • 200 ml apple juice
  • 300 ml apple cider vinegar
  • 300 g caster sugar
  • 1 tsp salt

Bring to a gentle boil and simmer for 30 minutes until they are softened.","2":"Drain out the vinegar and set it aside. Put all the peppers into a food processor and blitz until a smooth puree is formed.","4":"Strain out the skins and seeds from the puree by passing it through a strainer.","6":"Add the mixture back into the saucepan, add the vinegar mixture, sugar and salt, and again simmer for 1 hour or until the mixture has reached a jammy consistency.","8":"Allow the mixture to cool.
