  • 1 1/2 pounds chicken breast skinned and diced
  • 4 tablespoons vegetable oil
  • 2 cloves garlic fresh, chopped
  • 2 inches fresh ginger chopped
  • spanish onion
  • red pepper chopped
  • green pepper chopped
  • yellow pepper chopped
  • 6 green chillies fresh, chopped
  • 2 tablespoons coriander leaves fresh
  • 2 fresh tomatoes
  • 1 salt to taste
  • 1 teaspoon cumin seed white
  • 1 teaspoon mustard seed
  • 1 teaspoon turmeric
  • 1 tablespoon curry powder

    Prepare the chicken.

    Heat the oil and fry cumin seed mustard seeds the garlic ginger and onion for just 1 minute each.

    Add turmeric curry powder and a drop of water just to prevent sticking.

    Add the peppers chilli and the chicken and stirfry for 10 minutes.

    Add the coriander and tomatoes stirfry for 5 minutes minimum.

    Check that the chicken is cooked rightthrough (cut a large piece in haft) and if so serve at once. I
