- 10 each mushrooms, chinese small
- 1/4 pound shrimp
- 5 each water chestnuts fresh or 7 canned
- 1/2 pound ground pork
- 1 each scallions, spring or green onions finely chopped
- 1 package wonton wrappers
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1 teaspoon soy sauce, tamari thin
- 1 teaspoon oyster sauce
- 1 dash black pepper
- 1 1/4 tablespoons cornstarch
- 1 small eggs
Directions

1Boil Chinese mushrooms for 10 minutes, rinse, squeeze dry, cut off, and discard stems; then, chop into very small pieces.

2Shell, devein and wash prawns.

3Chop into very small pieces Peel and crush water chestnuts with the flat side of the cleaver.

4If you don't have a cleaver, chop the water chestnuts into very fine pieces.

5Combine mushrooms, prawns, water chestnuts, pork and green onion.

6Add all other ingredients and mix well.

8With one corner of the skin toward you, place 1 teaspoon of filling about an inch from the corner.

9Fold one corner to cover the filling.

10Fold once more about 3/4 inch.

11Turn the won ton so that the triangel is toward you.

12Dampen the left corner with a little water.

13Swing the right corner away from you and place it on top of the dampened left corner.

14As you make this fold, simultaneously pull the filling toward you with your middle finger.
