- 2 lb. chicken breast, cooked and cut into 1-inch chunks
- 1 medium onion, chopped
- oil
- 4 c. chicken broth
- 1 (1 lb.) bag frozen vegetables (mushrooms, broccoli and water chestnut combination)
- 3 Tbsp. soy sauce
- 4 c. Minute rice
Directions

1In large pan, saute chicken and oil until chicken is lightly browned.

2Add broth, vegetables and soy sauce.

3Bring to a boil. Stir in rice.

4Cover.

5Remove from heat.

6Let stand 10 minutes. Fluff with a fork.

7Add soy sauce to individual servings.
