  • 2 lb. chicken breast, cooked and cut into 1-inch chunks
  • 1 medium onion, chopped
  • oil
  • 4 c. chicken broth
  • 1 (1 lb.) bag frozen vegetables (mushrooms, broccoli and water chestnut combination)
  • 3 Tbsp. soy sauce
  • 4 c. Minute rice

Directions

    In large pan, saute chicken and oil until chicken is lightly browned.

    Add broth, vegetables and soy sauce.

    Bring to a boil. Stir in rice.

    Cover.

    Remove from heat.

    Let stand 10 minutes. Fluff with a fork.

    Add soy sauce to individual servings.
