- 2 eggs, beaten
- 1 Tbsp. butter or margarine
- 3 Tbsp. cooking oil
- 1/2 c. sliced scallions (include green part)
- 4 c. cold cooked rice
- 2 Tbsp. soy sauce
- 1/2 tsp. sugar
- 1 c. diced ham
Directions

1Scramble beaten eggs in butter and set aside.

2In a large skillet, heat cooking oil and stir in sliced scallions and cooked rice; stir quickly to coat rice with oil.

3Mix in the soy sauce, sugar and cooked ham.

4Stir in scrambled eggs, which have been cut into small pieces.

5Heat for about 5 minutes, stirring frequently.
