  • 1/2 teaspoon cornstarch
  • non-stick cooking spray
  • 2 cups carrots pre-grated
  • 1/4 cup onions pre-cut chopped
  • 1 cup snow pea pods fresh, thinly sliced lengthwise
  • 2 skinless boneless chicken breasts cooked and cut into thin strips, about 10 ounces
  • 12 butter lettuce leaves
