  • 12 c. peeled, chopped tomatoes
  • 3 c. chopped celery
  • 2 c. chopped onion
  • 1 c. chopped green pepper
  • 2 tsp. salt
  • 2 c. sugar
  • 1/4 c. brown sugar
  • 1 1/2 tsp. black pepper
  • 1 1/2 tsp. mixed pickle spice
  • 1 c. vinegar

Directions

    Place vegetables in a large kettle and add rest of the ingredients.

    Put mixed pickle spices in a cheesecloth bag before adding.

    Bring to a boil.

    Reduce heat and simmer uncovered for 30 to 45 minutes or until vegetables are tender.

    Ladle into jars and seal.

    Process in boiling water bath for 10 minutes.
