  • 4 eggs
  • 3/4 cup coconut milk
  • 2 tbsp vanilla extract
  • 3/4 cup honey
  • 1/2 cup almond meal
  • 1/2 cup coconut flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup shredded coconut
  • 1 cup dark chocolate chips

    Preheat oven to 350F

    In a large bowl mix the eggs, coconut milk, vanilla extract and honey

    In a separate bowl mix almond meal, coconut flour, salt and baking soda
  4. 4
    Combine the wet and dry ingredients and mix well
  5. 5
    Fold in 1/2 of the chocolate chips
  6. 6
    Grease a muffin sheet and fill each cup to the top, cover with shredded coconut and the other 1/2 of the chocolate chips

    Bake for 30 minutes
