Chocolate-Filled Doughnuts

  • 1 1/4 cups granulated sugar
  • 2 eggs
  • 1 1/2 tablespoons butter softened
  • 1/2 cup buttermilk
  • 3 1/2 ounces milk chocolate melted
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 20 chocolate easter eggs mini, unwrapped
  • vegetable oil for shallow frying

    Cream 1/3 cup sugar, eggs and butter until light and fluffy. Gradually add buttermilk and melted chocolate. Sift together flour, baking powder and baking soda. Fold in until just combined and smooth. Cover and chill for 1 hour 30 mins.

    Meanwhile, combine remaining sugar and cinnamon. Set aside.

    Turn dough out onto a lightly floured surface and divide into 20 portions. Using floured hands, roll each portion into a ball around an Easter egg, completely encasing eggs. Flatten slightly.

    Heat oil in a large pan over low heat. Working in batches, shallow fry doughnuts, turning constantly, for 4-5 mins, until golden and cooked through. Drain on paper towels then toss in cinnamon sugar. Serve immediately.
