- 4 large fresh eggs
- 3/4 cup caster sugar
- 1 tablespoon golden syrup
- 1/2 cup cornflour
- 2 tablespoons plain flour
- 2 teaspoons cocoa powder
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
Directions

1Separate egg yolks.

2Beat whites until fluffy, add sugar and beat well.

3Beat in yolks followed by golden syrup.

4Sift dry ingredients and fold into mixture.

5Place mixture in lined tin (20-23cm).

6Bake approximately 20 minutes(may take a bit longer) in moderate oven.

7Ice cake with chocolate icing and put a chopped up peppermint crisp (topping of choice) on top.

8Fill with whipped cream.
