Chocolate Mousse Cake

- 7 oz dark chocolate, 6 oz broken into pieces, 1 oz shaved
- 6 None eggs, separated
- 3/4 cup sugar
- 35 None Ladyfinger cookies
- 1/2 cup heavy cream, whipped
Directions

1Melt the broken chocolate in a heatproof bowl set over a pan of simmering water. Beat the egg yolks and half the sugar in a heatproof bowl set over a pan of barely simmering water until bright yellow and creamy. Remove from the heat and gradually stir in the melted chocolate.

2Beat the egg whites until they from stiff peaks, gradually add the remaining sugar and a pinch of salt. Gently fold into the chocolate mixture and chill for 1 hour.

3Line an 8 inch diameter cake pan with aluminum foil. Line the bottom and sides with the ladyfingers. Spoon in the chocolate mousse and smooth out. Chill for at least 3 hours.

4Turn out on to a plate and remove the foil. Spread the whipped cream over the top and top with the chocolate shavings.
