  • 1 1/2 c. butter
  • 3 c. sugar
  • 2 tsp. vanilla extract
  • 5 eggs
  • 1 1/2 tsp. instant coffee
  • 1/4 c. hot water
  • 2 c. all-purpose flour
  • 3/4 c. baking cocoa
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 c. buttermilk
  • 1/4 c. confectioners sugar

    Preheat oven to 325°.

    Cream the butter, sugar and vanilla in mixer bowl for about 5 minutes or until light and fluffy.

    Add eggs, one at a time, beating well after each addition.

    Dissolve coffee powder in hot water.

    Sift flour, cocoa, salt and baking powder together.

    Add to creamed mixture alternately with coffee and buttermilk, beating just until blended after each addition. Pour into well-greased and floured, fluted tube pan.

    Bake for 1 hour and 10 minutes to 1 hour and 20 minutes or until cake tests done.
