  • 1/2 cup baking chocolate chopped
  • 6 1/3 tablespoons butter
  • 4 egg separated
  • 7/8 cup heavy cream
  • 11/16 cup almond flour
  • 9/16 cup breadcrumbs
  • salt
  • 1/2 cup sugar

    Preheat the oven to 160 degrees Celsius.

    Melt the chocolate in a double boiler and allow to cool.

    Cream 70 grams of butter, and then add the egg yolks, cream, and melted chocolate.

    Add the almond flour and breadcrumbs and mix together.

    Whisk the egg whites with a pinch of salt and 70 grams of sugar and fold into the mixture.

    Grease 8 small pudding molds of 1.5-liter capacity or 1 large mold.

    Sprinkle with remaining sugar and fill with the mixture.
