  • 1 tablespoon Dijon mustard
  • 2 tablespoons white wine vinegar
  • 1 tablespoon apple cider vinegar
  • 6 tablespoons olive oil
  • salt and pepper
  • 1 red bell pepper
  • 1 red onion
  • 6 medium tomatoes
  • 12 English cucumber
  • 2 heads romaine lettuce
  • 1 radicchio
  • 1 cup Italian parsley
  • 1 cup basil
  • 1 cup mint
  • 6 ounces feta

Directions

    Prepare the dressing by mixing until combined mustard, olive oil, both vinegars and add salt and pepper to taste.

    On large cutting board chop all the veggies into small 1/2 inch size pieces combining as you chop each item.

    Slowly add dressing to vegetables and mix until the taste is perfect.
