- 12 cup lime juice
- 13 cup olive oil
- 1 tablespoon minced cilantro
- 1 teaspoon hot pepper flakes
- 2 garlic cloves, minced
- 2 tablespoons honey
- 6 cups chopped romaine lettuce
- 1 (15 ounce) can black beans, drained and rinsed
- 1 cup chopped peeled jicama
- 1 (15 ounce) can corn, drained
- 1 bell pepper, seeded cored and diced
- 2 avocados, peeled and diced
- 12 cup crumbled Cotija cheese
Directions

1Dressing: in a small bowl, whisk together lime juice, olive oil, cilantro, hot pepper flakes, garlic and honey.
