  • 12 cup lime juice
  • 13 cup olive oil
  • 1 tablespoon minced cilantro
  • 1 teaspoon hot pepper flakes
  • 2 garlic cloves, minced
  • 2 tablespoons honey
  • 6 cups chopped romaine lettuce
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 cup chopped peeled jicama
  • 1 (15 ounce) can corn, drained
  • 1 bell pepper, seeded cored and diced
  • 2 avocados, peeled and diced
  • 12 cup crumbled Cotija cheese

Directions

    Dressing: in a small bowl, whisk together lime juice, olive oil, cilantro, hot pepper flakes, garlic and honey.

    Spread lettuce evenly across a large serving platter.
