10 ingredients
30 steps
Ingredients
- Nonstick cooking spray
- 1 1/2 cups all-purpose flour, plus more for rolling
- 1/4 teaspoon salt
- 8 tablespoons (1 stick) cold unsalted butter, cubed
- 6 ounces raw chorizo, casing removed
- 5 large eggs
- 1/2 cup whole milk
- 1/2 cup heavy cream
- 1 1/2 cups grated Emmenthal cheese (about 6 ounces)
- 1 cup diced boiled potato
Directions
-
1Spray a 9-inch glass pie dish with nonstick cooking spray.
-
2Mix the flour and salt in a food processor.
-
3Add the butter and pulse to form a coarse meal.
-
4With the motor running, add 6 tablespoons cold water in a slow stream, processing until the dough comes together.
-
5Then gather the dough into a ball and transfer it to a floured surface.
-
6Roll the dough out to form a 12-inch round.
-
7Transfer the dough to the prepared pie dish.
-
8Crimp the edges between your fingers to make a decorative border, removing any excess dough.
-
9Freeze the crust for 20 minutes.
-
10Preheat the oven to 425F.
-
11Line the crust with foil and fill it with pie weights or uncooked dried beans.
-
12Bake for 15 minutes.
-
13Then remove the foil and beans and continue to bake for 5 minutes, or until the crust is golden brown.
-
14Let the crust cool completely.
-
15(The crust can be made 1 day ahead.
-
16Cover and store at room temperature.)
-
17Leave the oven on.
-
18Cook the chorizo in a dry medium-size heavy saute pan over medium heat for 8 minutes, or until dry and crisp.
-
19Let the chorizo cool on a paper towellined plate.
-
20Whisk the eggs, milk, and cream in a large bowl.
-
21Mix in the chorizo, cheese, and potato.
-
22Pour the mixture into the cooled crust.
-
23Bake for 35 minutes, or until the filling is puffed and a knife inserted into the center comes out clean.
-
24Serve hot or at room temperature, cut into wedges.
-
25Making any type of crust intimidates some people in the kitchen, especially beginners.
-
26When it comes to baking, I strongly suggest following recipes exactlymaking sure the butter is cold (freeze it after youve cubed it to ensure its at its coldest) results in a flakier crust, for example, as does taking care not to overwork the dough when gathering it together.
-
27If you still find making a crust is not your thing or you simply dont have timerest assured that the chorizo filling is delicious in a store-bought pie crust, too.
-
28You can buy readymade dough, roll it out yourself, and follow the same directions, or even easier, purchase a preformed frozen crust.
-
29Thaw and bake the crust on its own until light golden brown according to package directions.
-
30Once cool, add the filling and follow the recipe instructions for baking.
