Ingredients

  • 1 tbsp peanut oil
  • 1 lb ground turkey
  • 1 medium red onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tbsp mild curry powder
  • 2 None stalks celery, trimmed and finely chopped
  • 1 medium carrot, coarsely grated
  • 1/4 cup reduced sodium chicken stock
  • 2 tbsp oyster sauce
  • 1 tbsp Japanese soy sauce
  • 3 cups finely shredded Chinese cabbage
  • 1 cup frozen baby peas
  • 4 oz fried noodles
  • 1/3 cup blanched almonds, toasted and coarsely chopped
  • 2 None green onions, thinly sliced

Directions

    Heat oil in wok on high heat. Stir-fry ground turkey, red onion and garlic until turkey changes color. Add curry powder; stir-fry until fragrant.

    Add celery and carrot; stir-fry until vegetables are tender. Add stock, sauces, Chinese cabbage and peas; stir-fry until cabbage wilts.

    Serve stir-fry sprinkled with noodles, nuts and green onions.
