Christmas "Bow" Pasta

Ingredients

  • 2 Tbsp. olive oil
  • 3 cloves crushed garlic
  • 1 Spanish onion (large), chopped
  • 1 head broccoli, cut up (reserve 1 c. for decoration)
  • 2 large red peppers, chopped (reserve 1/2 c. for decoration)
  • 1 to 1 1/2 lb. bow tie pasta
  • 1 tsp. chopped basil
  • 1 c. light cream or milk
  • 1 large can chopped plum tomatoes or 8 fresh
  • 1/2 c. red wine
  • 3/4 c. Parmesan cheese
  • salt and pepper to taste

Directions

    Saute onion, broccoli, peppers and garlic in olive oil until tender.

    Add tomatoes, wine and season.

    Simmer 5 to 10 minutes. Add cream or milk and cheese.

    Toss with bow tie pasta (1 to 1 1/2 pounds).

    Decorate top with reserved broccoli and pepper.

    Sprinkle with Parmesan cheese.
