Ingredients

  • 3 c. sugar
  • 1/2 c. light corn syrup
  • 1 c. water
  • 1/4 c. butter, cut into pieces
  • 1 tsp. salt
  • 1 (16 oz.) jar unsalted dry roasted peanuts
  • 1 1/2 tsp. baking soda
  • 1 tsp. vanilla extract

    Grease 2 cookie sheets and keep warm in 200° oven.

    In large saucepan, combine the sugar, corn syrup and 1 cup water.

    Cook over medium heat, stirring constantly, until a candy thermometer reaches 240° (soft ball stage).

    Stir in butter, salt and peanuts.

    Keep cooking, stirring constantly, until mixture reaches 300°.

    Combine soda, 1 teaspoon water and vanilla.

    Remove saucepan from heat; stir in soda mixture.

    Quickly spread half of mixture in each pan. Spread with a spatula 1/4-inch thick.

    Cool and break into pieces. Yields about 2 1/2 pounds.
