- 3 c. sugar
- 1/2 c. light corn syrup
- 1 c. water
- 1/4 c. butter, cut into pieces
- 1 tsp. salt
- 1 (16 oz.) jar unsalted dry roasted peanuts
- 1 1/2 tsp. baking soda
- 1 tsp. vanilla extract
Directions

1Grease 2 cookie sheets and keep warm in 200° oven.

2In large saucepan, combine the sugar, corn syrup and 1 cup water.

3Cook over medium heat, stirring constantly, until a candy thermometer reaches 240° (soft ball stage).

4Stir in butter, salt and peanuts.

5Keep cooking, stirring constantly, until mixture reaches 300°.

6Combine soda, 1 teaspoon water and vanilla.

7Remove saucepan from heat; stir in soda mixture.

8Quickly spread half of mixture in each pan. Spread with a spatula 1/4-inch thick.

9Cool and break into pieces. Yields about 2 1/2 pounds.
